When Santa gets his perfectly flexed forearms on your protein pancakes, you better believe he makes ‘em peppy. These jacked stacks feature 17 grams of protein, 3 grams of fiber, and 1,000,000 grams of holiday cheer (and that’s not even counting the sprinkles).
Ingredients:
For the pancakes
King Arthur Gluten-Free Protein Pancake Mix
Supernatural Food Color, Holiday Edition (1 Green, 1 Red)
Butter or Oil
Eggs
Milk
For the zhuzh
Into The Woods Dye-Free Sprinkles
Whipped Cream or Greek Yogurt
Maple Syrup (if desired)
Review the pancake mix directions to determine your chosen serving size. According to the directions, measure and divide the mix evenly among the two bowls.
To one bowl, add the red packet of color. To the other bowl, add the green. Whisk gently into pancake mix to incorporate. (If you are making the smallest serving of pancakes, use half the packet.)
Whisk together the remaining ingredients, then divide equally among the two bowls. Whisk to combine, then allow to site for 10 minutes to thicken. Whisk once more to ensure color is fully dissolved.
Heat a griddle over medium heat, coating the bottom with a small amount of butter or oil. Working in batches, pour or scoop the batter onto the griddle, using about 1/4 cup each time. Brown gently on both sides.
Time to zhuzh! We recommend serving with a dollop of greek yogurt, a shake of Into The Woods Sprinkles, and a drizzle of real maple syrup.
